Sweet Coconut Rolls

1: In a pan, add jaggery and water. Heat over medium heat until the jaggery melts, creating a syrup.

2: Add shredded coconut to the pan and mix well with the jaggery syrup.

3: Add cardamom powder (or whole cardamom) and a pinch of salt. Continue mixing until the coconut is fully combined with the syrup. Set aside to cool.

4: Take a Switz Spring Roll Sheet and place about 2 tablespoons of the jaggery-coconut filling on one corner.

5: Fold the sides of the sheet towards the center and then roll it tightly, sealing the edges with a little water or flour slurry.

6: Repeat the process with the remaining spring roll sheets and filling.

7: Heat oil in a pan or fryer for deep frying.

8: Carefully place the prepared rolls in the hot oil and fry until they turn golden brown and crispy. Fry them in batches to avoid overcrowding.

9: Once fried, remove the spring rolls from the oil and drain the excess oil on a paper towel.

10: Serve the sweet Coconut Rolls hot and enjoy your delicious homemade spring rolls!
