Accordion Potato Fry

1: Peel the potatoes and slice them into thick, rectangular slabs (about 1/2 inch thick).

2: Place a potato slab between two skewers or chopsticks and use a knife to make thin cuts vertically without slicing all the way through.

3: Flip the potato and make diagonal cuts across the other side to create the accordion pattern.

4: Gently stretch the potato so the cuts open up slightly.

5: Soak the cut potatoes in cold water for 10–15 minutes to remove excess starch. Pat dry.

6: In a bowl, mix cornflour, chili powder, turmeric, black pepper, garlic powder (if using), and salt.

7: Dust the potatoes with this dry mix, making sure it gets into the cuts.

8: Deep fry in hot oil until golden and crispy.

9: Sprinkle with chaat masala and garnish with coriander.

10: Serve hot with ketchup, mint chutney, or mayo.
