Chilly Bajji is a delicious snack made with gram flour and rice flour, fried until golden brown and crispy, then filled with a tangy onion and coriander mixture, served with spicy dipping sauce.
In a mixing bowl, combine gram flour, rice flour, Kashmiri chili powder, fennel seed powder, baking soda, and salt. Mix well.
Gradually add water to the dry ingredients and whisk until you achieve a smooth and thick batter consistency. Set the batter aside for 10-15 minutes.
Meanwhile, prepare the filling by combining chopped onion, coriander leaves, lime juice, chili powder, and salt in a separate bowl. Mix well and set it aside.
Heat oil in a deep frying pan over medium heat.
Dip each chili into the prepared batter, ensuring it is evenly coated, and gently slide it into the hot oil. Repeat with more chilies, avoiding overcrowding.
Fry the bajjis until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate.
Once the bajjis have slightly cooled, carefully slit them lengthwise without cutting all the way through.
Stuff each bajji with a generous amount of the prepared onion, coriander, lime, chili powder, and salt filling.
Serve the Chilly Bajjis with your favorite chutney or spicy chilly sauce.
