A delicious Kerala style beef stew that brings warmth on a rainy day. This hearty stew combines beef with an array of spices, vegetables, and thick coconut milk, making it a comforting dish. If you prefer, you can substitute beef with chicken for a lighter option.
In a cooker, add beef, salt, crushed pepper, and water. Mix them well and let it cook for the first whistle, then lower the flame.
In a pan, add coconut oil, cinnamon, cardamom, and cloves, and sauté them well.
Add sliced onion, ginger, garlic, and chopped chillies. Sauté until the onions turn translucent without caramelizing.
Add the beef pieces, chopped potato, and carrot.
Now add thick coconut milk and curry leaves. Cover and cook on medium flame while stirring.
Finally, add more thick coconut milk, garam masala, pepper, green chilli, and curry leaves. The stew is ready!
